My modified cookies.

For many years I have loved baking and whenever I can I always go to the kitchen to make something with my flour.

Today I was provoked to make a recipe for cookies with cornmeal. I modified it and added wheat flour to see what I could achieve in terms of flavor and texture. I made my cookies and put them in the oven.

When they were golden brown underneath I removed them from the oven and checked my creation. The cookies turned out with a crunchy texture and a nice flavor.

The original recipe with cornstarch and condensed milk makes soft cookies, sandy on the palate that dissolves on contact with the mouth, but adding the wheat flour makes them crunchier and they are not sandy in texture, you have to chew them. They are delicious with a good cup of tea or chocolate.

I once mixed cornflour and wheat flour but can't remember what the difference was. Same for oatmeal plus wheat flour. It depends on the amount of flour and sugar.

I cannot bake that much any longer. There's one kg less in a bottle plus the price is twice as high.

Baking with cornstarch the texture is different from baking with wheat flour because the cookies are grittier and dissolve in the mouth on contact.
