This is my this week's contribution to #steemit-ironchef, the famous ☺️ food challenge run by @progressivechef.

The theme of the week is nuts. Here is the link to the Rules: STEEMIT IRON CHEF 2018 Act 01 Round 05.

My first thought was to bake some different sorts of baklava - a perfect way to use different sorts nuts. But I decided to avoid coffee, sugar - at least sweets - and alcohol during this years Lenten season to find out what this would do with my body. It would have been too hard to stay strong while having these tempting treats at home ... But that doesn't mean I don't eat anymore wouldn't enjoy delicious food!

Because I am in the last minute this time, I try to keep it short and won't write a very detailed recipe. I hope, the photos speak for themselves. Please feel free to ask if you have some questions.

These were most of my ingredients:

Italian pasta, carrots, celery, zucchini, oyster mushrooms, parsley, an apple, a pink grapefruit, some vegan creme cheese, walnut oil, cashews and sunflower seeds, pine nuts, a mixture of walnuts, almonds, haselnuts, cashews an pecannuts.

I made a 'basic' nut creme of soaked cashews and sunflower seeds mixing them carefully in my food processor. I used this base for the salad dressing as well as for the pasta sauce.

For the salad I sliced zucchini, celery, carrots and apples and fillet the grapefruit.

The dressing is a mixture of the nutcream, some walnuts oil, apple cider vinegar and salt and pepper.

I roasted the nuts ...

I prepared a filling for the pasta made of finely chopped carrots, oyster mushrooms, zucchini and the nut mixture. I stirred in the vegan cream cheese and seasoned with salt, pepper and sweet paprika powder and filled this mixture into the cooked pasta. 

For the green pasta sauce I added some thyme leaves, lots of parsley, two gloves of garlic, salt and fresh ground black pepper. I mixed it carefully and heated it up a little afterwards. It was delicious already cold so I thought a moment to leave it cold - but it's already cold outside. Might be nice in summer.

I served the pasta topped with some of the green sauce and some extra sauce in another dish and in a third dish the salad springled with some pine nuts. 

Enjoy! The hubby was enthusiastically again. It turned out very delicious. Hmmm!

Woe the green pasta sauce is a good idea! I wanted to fill the pasta two weeks ago and made a big mess lol

That was my biggest fear. I observed the pasta all the time while cooking becaus I was afraid of cooking it to death ... The green pasta sauce also goes well with just plain pasta. I have a lot left over. I already know what I will eat tomorrow ... 😋
