I have never had hot pot, what an awesome experience I would love to try out!
It's actually quite a simple thing. There's a pot of soup and all sorts of things raw (meat, veggies and all on the side. Then everyone take and put what they one into the pot and cook and take it out with a ladle. Other than the soup, the flavoring comes from the sauce which is also something you put together with different types of sauces which includes things like sesame oil, chili oil, chili sauce, soy sauce, peanuts bits, sesame, among other things. Not quite difficult to put together yourself. :-)
Very cool! That sounds a bit like our Mongolian BBQ places. Only difference is you take the raw food you want up to a massive grill and they cook it fast while you wait!!
I had Mongolia BBQ. Pretty much what you describe.
The difference for hotpot is the pot is on your table and you cook the food yourselves but pay them for the opportunity to do that. :-)
