I am not the world's best cook, but I am a foodie. With the hectic schedule I often succumb to take out food because time hardly permits me to prepare food. I realized it is an unhealthy choice if made everyday, so a friend, the microwave came to my rescue. Read on to know the simple and healthy recipe for Roasted Chicken in fish sauce with herb butter garlic rice and lemon dressing salad

Roasted Chicken in Fish Sauce

Marinate the chicken with lemon juice, salt and pepper for 15 mins. Then lay it on the roasting pan and add the fish sauce. Set your microwave on OTG and for 1/2 kg chicken set the timer for 25 mins.

Salad with Lemon dressing

Its quite simple. Take the fresh vegetable of your choice. I personally like fresh peas, cabbage, bell pepper, tomatoes, carrots and cucumber. You can dice the vegetables while the roasting is on the way. Throw it all on to a bowl, add salt, a pinch of green chilies and a splash of mustard oil, tumble it all with a spoon and finally squeeze a lemon.

Herb Butter Garlic Rice

This one is the easiest of all. In a pan lay a bit of butter, when it starts to melt put tiny minced garlic cloves and add a little mixed Italian herbs. When you see them all sizzling add peas and toss it a bit. Then finally add the rice with enough salt to taste.
