Lemon Poppy Seed Salad Dressing

I got this recipe from my mom, who found it in the local newspaper. This is a sweet salad dressing that tastes great with the fresh apple and pear salad described below. The recipe makes enough for a salad using a whole head of lettuce and is perfect for an end-of-the-summer party. If you want to cross salad dressing off your grocery list, double the dressing recipe, find an air-tight container, and keep it refrigerated to enjoy over the course of a few weeks.

Dressing:

  • 1/2 cup white sugar
  • 1/2 cup lemon juice
  • 2 teaspoons diced onion
  • 1 teaspoon Dijon-style prepared mustard
  • 1/2 teaspoon salt
  • 2/3 cup vegetable oil
  • 1 tablespoon poppy seeds

Salad:

  • 1 head romaine lettuce
  • 1 apple, cored and diced
  • 1 pear, cored and diced
  • 4 oz Swiss cheese, shredded
  • 1/4 cup dried cranberries
  • 1 cup cashews

Combine all ingredients for dressing in a medium bowl. Whisk together thoroughly. Tear lettuce into bit size pieces. Add diced apple and pear to lettuce in a large salad bowl. Top with Swiss cheese, cranberries, and cashews. Serve with dressing!

After washing the lettuce, let it drip dry in a colander for a few minutes so that the salad doesn't get soggy. You can keep the dressing on the side, or you can mix it right into the salad. Don't neglect the dried cranberries, a.k.a. craisins, the next best thing to my favorite snack and salad topping must, raisins!
