In our household, we don't carve pumpkins... we EAT pumpkins!
This time of year, pumpkins are available very inexpensively.
I know when grocery stores are selling pumpkins, its so people can carve faces and designs into them for display, usually sitting outside for days and weeks ultimately rotting and being thrown away.
What a waste!
In our house, we EAT our pumpkins! They're not sold by the lb, but by item. So when we see pumpkins for just over $2, we make sure to pick one (or two) up!
Children grab their beginner's knives...
Daddy had to slice it in two. The girls cleaned out the "guts" and seeds.
We filled four gallon bags with pumpkin chunks, perfect for a few dinners.
We also collected lots of seeds!
The girls like squishing the slippery seeds in the water.
This will make some good dinners!
We cooked one of them up the following night. Delicious! It tastes like butternut squash.

Savages! ;). I haven't gone that far before except to dry and salt the seeds. Those do make for a great snack!
We have lots of yummy roasted pumpkin seeds to munch on.
Better than sunflower seeds IMO.
It's never occured to me, but I have never eaten a pumpkin.

Oh yeah, Ed loves a pumpkin soup. I'm planning on making a couple of pies this weekend, and freeze the extra to make pancakes with.
