Chicken Cashew Stir Fry
🔴1 tsp sesame oil
🔴90 grams chicken breast fillets
🔴1/2 red capsicum, sliced
🔴1/3 cup snow peas, topped and tailed
🔴1 cup bean sprouts
🔴1 tsp soy sauce, salt reduced
🔴2 tsp cashew nuts, unsalted, chopped
Heat a fry pan over medium-high heat and add the sesame oil.
Dice the chicken and add to the pan. Cook until browned and cooked through,
around 4-5 minutes.
Add vegetables to the pan and stir fry for a minute so they are still crisp but
warmed through.
Add soy sauce and combine for another 30 seconds over the heat.
Top with cashews and serve immediately.
