Supper!

So today was a food day. Up at 7 to go get roosters from my friend Kim. Her roosters were harassing her hens and stressing them out. One of them looked to have been cut by a rooster's spur, and most of them had bare spots on their backs.

She gave me her five most rapey roosters to be processed, and @burntoblog came over around 10 to help. While I waited on him to get here I washed buckets and dug a hole out back to bury the guts. (what's a food word for guts?) First we picked veggies, then we went to get ice. We put the ice in the clean buckets and ot to work.

I was surprised at how much easier it was to cut the neck veins on the larger chickens than it was on the banty rooster we ate a while back. It made draining the blood much easier.

After cleaning them, which took about three and a half hours including cleanup, we cooked! I had forgotten to eat breakfast, so I was hungry! We roasted one with potatoes, rosemary, olive oil, and lemon pepper seasoning. Squash was cooked in salt, pepper, and butter, and came out absolutely perfect. The cucumbers we're marinated in white vinegar with black pepper. So fresh.

I didn't get a picture of my plate or the completed meal, because I was only thinking about eating. What a great meal and a good day with my best friend! Hard work for sure, and it paid off so much.

You weren’t kidding about the chicken chasing! By the looks of it you burned enough calories to justify eating that bird! Looks pretty tasty! 😋

Chicken chasing us a dynamic sport of wits, endurance, and ankles! I think I'm gonna make a habit of it. Various health benefits including, but not limited to, skinniness, fastness, smartness, good food, and tiredness. Chase a chicken a day to keep the doctor away!

Oh man. Best squash I ever made.

It was a really fulfilling meal, after working in the garden all summer then working all day on the birds. Felt good.

He was an older bird, so not real tender. But he tasted good.

Melissa made some readymade chicken strips from the store for the kids (we didn't tell them til after they had eaten...) and I tried one to see the difference. The store bird had no flavor to speak of besides the breading it was in. I was quite surprised to be able to tell such a difference.

Aaah yes the challenge of the rooster rabble! Did you find you needed a long cook or was the meat not tough? I find the free rangers are very tasty but need a slow roast (the solar cooker is best)

Maybe that was part of the problem. We cooked him at 350° for an hour and a half. Maybe too hot and too fast. But he was an old bird too, which I have no doubt was a consideration.

We have a recipe for free rangers:
Marinade chicken overnight with a brick. Roast all day, with the brick. Once cooked, throw away the chicken and eat the brick!
Funny but sometimes true. You need a looooooooong slow cook. Best to marinade overnight and then leave it cooking on a low heat all day (That way you don't need to eat the brick ;)

Hahahahahah!

Well we've got one chicken left (gave three to @burntoblog and family), we'll be sure to cook him in the crock pot all day.

How was the rooster? How old was he? We've found if we don't let them "hang" for 3 days they tend to be tough at 18 weeks or older. That's why we grind the old layers.

We have a crab net left from our Florida days and we use that to catch chickens. Neither of us is any good at running. I can get up to 4 at a time with the net.

I saw last night's post saying supper! but thought, he wouldn't be eating HIS birds....

He was old and pretty tough. None of them were under 8 months old. Two were particularly fatty, this one included.

Not my sweet pretty little birds, they're not food yet. But these mean old sex offender roosters have victimized enough. She was ready to just start shooting them. After seeing her hens, I understood.

That's the second reason we don't have a rooster. Even one in sufficient area means tore up hens. Tore up hens do not lay well. They can either make feathers, or lay eggs, but not both.

Is there any benefit to a rooster besides fertilization?

If you free range, sometimes a rooster will protect his hens from predators. Other than that, no.

Hmm.. you're making.me think I need to get rid of Roo and add a couple more pullets...

I don't think Melissa is okay with any more chicks though lol maybe we'll keep him til he helps make us some chicks for us this spring ;)
