Lets make Vegetable Soup!

I'm still feeling quite a bit under the weather, so I though I should make soup again for today!

I thought I'd go with a simple vegetable soup today, with potatoes!

The great thing about vegetable soup is that you don't really need a recipe! You just start with whatever you wanna put in it and chop it up to put in water to cook. Here I started with three potatoes and some old celery

I cut the potatoes into slices, then quartered the slices by separating the slices into semi-equal halves. With bigger potatoes, you might have to seperate the slices into more stacks to make them easier to cut into quarters.

I then started the potatoes in hot water to pre-cook, since they take a bit longer than most things.

You wanna let them simmer a bit so they get soft before you add things that take less time.

I then chopped up half an onion as well as the old left over celery to throw in with the potatoes.

It was only then that he realized his vegetable soup was a bit...lacking...

So why not add a few black beans I cooked the other day?

I ended up adding two scoops with my ladle.

And while we're at it, why not half a cup of lentils?

I made sure to rinse them first.

Would have been better to add them with the potatoes, so they could cook down a bit, but it should be fine.

After those cooked a bit I added two carrots that I had set aside for the soup.

It's looking a lot better now!

I let it cook for a bit, then added some chopped up mushrooms that were getting ready to go bad. Nothing like vegetable soup to help you get rid of those old veggies before they go bad!

After it cooked for a bit I spiced it with various things, like curry powder, which is mainly turmeric, coriander, red pepper, fennel, mustard, garlic, fennel and cumin. I also added some fresh garlic when I added the mushrooms, and some extra roasted garlic powder. I also added a bit of oregano and quite a few other spices. Once you cook for a while you just sorta learn to throw things in there and figure out what tastes good.
