Escabeche is a type of sweet and sour fish cooked in vinegar and sugar. Fish must be fried first then you can add other ingredients such as bell pepper, carrots, ginger and tomato sauce or tomatoes some put Catsup. Sadly, I am lacking some of the ingredients. Bestie is not around to buy the ingredients. I only put ginger and spring onion.

Anyways, you can use Bangus (Milk fish), Red Maya-maya (Red snapper), Lapu-lapu (Grouper) and Tilapia (St. Peter's fish).
