Strawberry & Cream Meringue Cookies are so amazing, fresh and tasty. You get a bite of summer in each cookie. The perfect meringue is sweet, light and crisp with a slightly chewy centre and the strawberries are a perfect addition with vanilla cream. To die for.I hope you guys enjoy this recipe! If you like strawberries like I do, this is the dessert for you!

Ingredients

For the meringue
4 egg whites
225g caster sugar
50 gr strawberry coulis

For the filling
fresh strawberries
120 gr of mascarpone
120 gr double cream
50 gr strawberry coulis
3-6 tbsp of icing sugar
1 tsp of vanilla extract

Strawberry coulis
100 gr frozen strawberries
50 gr sugar

Directions

Step 1 : In a clean bowl, add egg whites. Make sure the bowl is not greasy and there is no egg yolks in your egg whites or it wont whisk to stiff peaks. Start whisking the egg white for 5 min on low speed until foamy, then slowly start adding sugar and whisk on high speed. Meringue is done when its glossy, you have stiff peaks and there is no sugar in the meringue.

Step 2 : Place frozen or fresh strawberries in a pan with sugar and cook on low for 5-10 min until strawberries soften. Once they are ready, place them into a blender and blend until smooth. Siv through strawberries if you wish, or you can leave them with seeds.

Step 3 : Mix strawberry puree with meringue, you can leave stripes if you want and place in a piping bag with no nosil. Pipe your strawberry meringue cookies on top of parchment paper and space them 1-2 cm apart as they grown in the oven.

Step 4 : Bake them for 1 hour for 120 C / 250 F. Leave the cookies to cool down completely.

Step 5 : Make vanilla cream. In a bowl, add mascarpone cheese and double cream. Whisk until soft peaks. Add vanilla extract and icing sugar and mix it well. Set in a fridge if you want it to set a little.

Step 6 : Place 1 tsp of cream into each meringue cookie, ad fresh strawberry and top with second half of meringue cookie. You can also pipe these for a cleaner cut. Place in a fridge to set. You should add the cream an hour before serving them, as they will go soggy if you dont eat them. Enjoy!

What a delicious recipe with. Even I don't like a lot of candy because, after a while, I think are nauseating, I'd love to try this Cupcake with Strawberry inside.

For me, the most delicious must be the white cream. It gives a special touch at dessert. Here in Brazil I also see some foods in this white cream is used and always very tasty. You put a post about participating in the master chef. If you get in (I'm in) can bring this dessert to go, because, besides being tasty, it's a very nice, sweet about the aesthetic part, Yes, the strawberry in this "cookie" makes you very beautiful.
