Making travel snack bars using nuts, coconut butter and cacao

This recipe is something I have been working on for many months. I use cacao butter, along with coconut butter and nuts in the bars. These bars are full of healthy fats, low sugar (if you dont add much). And made from ingredients you can identify. I find it very hard to find prepackaged snack bars that contain basic indigents. So I find I must make my own.

We set up a double broiler to melt the cacao butter. And then I mix in the coconut oil. I do this to make the bars a little softer. But you must find a balance between wanting them heat tolerant, or more soft. Im in The South, so we must use alot of cacao otherwise it will melt in your hands.

In more recent batches, I have been trying different nuts mixed into the bars. I started with almonds, but now I use a mixture of nuts. Anywhere from Pecans, Cashews, Peanuts, Macadamias and others.

I place them in a bag and smash them until they are bite sized. Then I move them into the oven to bake the nuts for about fifteen minutes or until you can smell them and they are slightly changing color. I love the smell of roasting nuts, one of the best things you can make in the kitchen.

As the cacao melts I mix both the coconut and cacao together and any sweeteners that is wanted.

I use a media of millet and nuts for the cacao and coconut to bind to. And once what is in the double broiler turns into liquid completely I pour it onto the millet/nut media.

Using glassware, I place the soupy mix into the freezer. And after about an hour or two it should turn solid. Taking it out of the freezer I can then break up the bars into snack sizes. I tend to use mason jars and store them in the refrigerator.
