It seems that modern dietology now just came to the point of its development, when many myths about nutrition can be debunked. This became possible due to the results obtained as a result of long (up to 40 years) experiments for relatively large groups of people. What gave these results?

Observations have shown that people who die from cancer and cardiovascular diseases will die much earlier than people with complete body mass index of 25-29.9 kg / m2. The difference in age between these groups can be up to 12-14 years. The people with a BMI of 23-25 ​​kg / m2 live the longest and least likely to suffer from diseases; with an average weight. According to scientists, this is due to the fact that fat tissue is able to synthesize certain types of hormones that are responsible for maintaining immunity and life expectancy, for example, the "female" hormone estrogen. In addition to hormones, our health also supports a number of other biologically active substances that prevent early mortality and the development of many diseases.

American scientists have concluded that women with overweight, but not at the stage of obesity, are less likely to face such diseases as breast cancer or osteoporosis than skinny and obese people.

People with a weight above the average, but without obesity, maintain normal fat and carbohydrate metabolism and blood pressure. Observations of scientists were supported by observations of insurance companies that noted the same pattern, between weight and human mortality.

If you do not now think about fast food and various kinds of snacks, then you will be completely wrong: there are no products that can be unequivocally said that it is harmful and useful. The whole secret lies in the "dosage" and the way of processing. Do you think that milk is useful? Yes it is. Milk should be an integral part of the nutrition of children who grow up, pregnant women, people with broken bones, for an early recovery, women over 50, for the prevention of osteoporosis. Nevertheless, with the age of many, the production of an enzyme of lactase, which breaks down lactose-carbohydrate, contained in milk, is reduced. It turns out that children - in joy, then for adults can turn into a stomach disorder. What to do? The answer is simple enough - to choose another way of processing milk. For example, fermented milk products (kefir, cottage cheese, yogurt, curdled milk) will not harm anyone. in them lactose is already split.

The same can be said about vegetables and fruits, many of which are contraindicated for use, in connection with such gastric diseases as an ulcer or gastritis. Nevertheless, we all know that fruits and vegetables are rich in vitamins and fiber essential for the body. In this case, fresh vegetables and fruits should be replaced with cooked or peeled, compotes, etc.

Thus, in order for the organism to receive all the useful products, it is necessary to learn how to properly extract these substances from products.

The main ways to extract food from our ancestors were gathering, hunting and fishing. Thus, the diet of an ancient man consisted of fruits, berries, root crops, meat and fish. This proves that it is not natural for a person to eat "one-sidedly", i.e. be a vegetarian or a meat-eater. Although from region to region the share of meat consumed in food varied, however, its total absence was not observed anywhere. This is easily explained by the energy value of meat, which many times exceeds the energy value of fruits and vegetables. In addition, the protein of animal origin has a beneficial effect on brain development.

With an eye for the old days, many complain that the food has now become unhealthy and unnatural, and people used to be less sick. Well, the truth is in this statement: the food was healthy, people were cheerful, healthy. Nevertheless, they lived only 30-40 years! Alas, this was the average life expectancy of a person in the 17th-19th centuries. Needless to say, a person simply did not live to see old age illnesses. could die of cholera, pneumonia, and the like. And the medicines for these diseases were rather questionable - meat, fat broth in large quantities. What in the end? Rich people tried to eat only meat, and as a result, most of them had scurvy. The poor diet was also limited, it did not have enough vitamins, and therefore they were more prone to infectious diseases. And now judge whether the food of the ancients was so healthy and proper.

There is an opinion that water should not be consumed during meals, because it reduces the concentration of gastric juice and, accordingly, slows the process of digestion of food. Nevertheless, modern research refutes this view. Consumption of water during eating in healthy people does not lead to any changes in digestion. From the consumption of water should refrain only those people who suffer from secretory insufficiency. In favor of the opinion of modern scientists, they speak also of the traditions of many peoples, which since ancient times have been combined with the intake of liquid. Thus, the issue of water consumption must be approached purely individually.
