Joyrobinson’s Creamy Herb Salmon With Almonds

Hello Steemians!

Hubby and I had been dining outside lately eating heavy foods and more sweets. Last Sunday, I was craving for salmon after watching a delicious salmon recipes on Facebook so when hubby arrived from his four days trip back in England, I decided to cook something healthy, Salmon in Creamy Herb Sauce.

Salmon is incredibly a tasty fish. When it comes to nutrition, it’s an excellent source of omega-3 fatty acids, high in protein, vitamins and minerals including potassium and vitamin B12.

Salmon can be pretty expensive which is the why I make sure that I’m buying the fresh one and cook it in perfection with something else to make it more special. In this recipe, I cook it with a herb sauce mixture made of suate onion, garlic, butter, cherry tomatoes, parsley, heavy cream substitute with plain greek yogurt, grated pamesan cheeze and topped with crushed almonds on top.

It’s simple and easy to prepare. It taste a little bit like the Tuscan buttered Salmon except That I’m using parsley herb instead of basil (because my potted basil is now completely dead.) and topped it with crushed almonds.

Preparation: 5 minutes
Cooking: 30 minutes
Total time: 35 minutes
Difficulty: Easy

INGREDIENTS:

  • 2 salmon fillets
  • 2 Tablespoons olive oil
  • 3 garlic cloves, minced
  • 1 medium onion , thinly sliced
  • 1 cup heavy cream (or greek yogurt)
  • ½ cup parmesan cheese
  • 1 Tablespoon cornstarch
  • 1 cup parsley, chopped
  • ½ cup cherry tomatoes
  • Handful of crushed almonds
  • Salt and pepper to taste

METHOD:

  1. Wash lightly and path dry the salmon then season with salt and pepper.
  1. Heat a large skillet over medium high heat and heat cooking oil. When the cooking oil is starting to smoke, reduce the heat temperature to medium heat. Carefully add the salmon and cook until golden brown for about five minutes. Flip over and cook the other side for two more minutes. Transfer to plate and set aside.

  1. Reduce heat and add the butter. When it has melted, Sauté the onions and garlic for one minute. Add the cherry tomatoes and season with salt and pepper.

  1. Put the heavy cream (or yogurt for alternate) and mix. Followed the parmesan and parsley. Mix all together, and simmer until sauce is slightly reduced for about two minutes.

  1. Return salmon back to skillet. Garnish with more herbs, squeeze lemon juice, sprinkle crushed almonds
    and simmer until salmon is cooked for about 3 minutes more.

  1. Serve immediately along with potatoes side dish or with pasta while it’s hot.

It really smells good and taste good.
I love the slightly crispy edge and it’s tenderness with creamy suace.

even if i can't taste it , just by picture i can tell it is very delicious .
