Hello my Dearest Foodies,

I hope you had a wonderful weekend and now you are ready to conquer another summer week. I was very busy creating new recipes which some of them worked out and some not so much, lol. But don't worry, I think I know how to fix it.

In the meantime, I have one for you that turned out very successful and delicious, so if you like Thai food this is it. Besides, these cauliflower wings a much healthier version of Thai food, because they are oil free, cholesterol free and refined sugar free. Anyway, I am not the first one who made cauliflower wings, but I took a little different spin on it. See if you like it and let me know what you think.

TANGY THAI CAULIFLOWER WINGS
Oven Baked Cauliflower Florets Dipped in Thai Sauce
Vegan – Oil Free - Gluten Free Optional

INGREDIENTS
• Cauliflower 1 (only florets)
• Whole grain Spelt flour ½ cup (you can use gluten free flour if you prefer)
• Plant based milk ½ cup
• Himalayan pink salt 1tsp
• Baking sheet
• Parchment Paper
• Baking rack

PROCESS
• Mix the flour, milk and salt in a bowl to for a batter.
• Place a parchment paper under baking rack.
• Preheat the oven to 450F
• Dip each floret in the batter and place it on the baking rack for the access batter to drip off.
• When ready, place the battered florets on baking sheet lined with parchment paper. Make sure they don’t touch each other, otherwise they stick.
• Bake in the oven for 15min, then flip over for another 10min.
• When ready, dip them in Thai sauce and bake for another 20min.
• Add more sauce and top with sesame seeds while serving.

TANGY THAI SAUCE
• Sun dried tomatoes 1/2 cup (oil free, soaked for 15min)
• Water ½ cup
• Low sodium Tamari 1 tbs
• Juice from 1 lemon
• Maple syrup ¼ cup
• Chili paste 1tbs (you may add more if you like spicy)
• Ginger 1tsp (fresh or powder)
• Garlic powder to taste
• Himalayan pink salt to taste

PROCESS
• Blend sun dried tomatoes with ¼ cup of water until smooth and set aside.
• In a small pot, bring maple syrup into boil and start adding gradually all the ingredients, while stirring.
• Add the tomato paste at the end, reduce the heat and let it simmer for 5min.
• Add another ¼ cup of water, stir again and let it simmer for one more minute.

Yummy! That looks so good! I know that Asian food is combined with rice and I like that combination but this delicious cauliflower I would serve with my signature potatoes, lol :)

It happens to me from time to time that I screw up recipes too. I think it's part of the creation process and I am lucky that my husband would eat anything :)

I'm not saying that I wouldn't like it with rice or Pad Thai noodles :) Right now I'm in the potato mood as the hotel in Italy was serving ayurveda food (whatever it means) so I ate plain vegetables for 3 days, lol. And I missed my potatoes so much :D

But I agree. It is in our blood. I could eat them everyday :)

Here they are! Well worth the wait, as this recipe looks fantastic! I'm definitely going to share it with my friends who made the Buffalo ones at our house this weekend. I think we will all gobble these up quickly! I keep just about everything in my own pantry, too, so even better when the only thing I have to buy is some more cauliflower. 💚
