Delicious Floss Tuhau

My dear Steemians friends, few day ago, I bought this beautiful Tuhau at the Tamu(wet market). Tuhau is one of the most popular traditional food in Sabah. It's a wild ginger that grows in Borneo jungle and scientifically known as Etlingera Coccinea.

Although Tuhau is categorised a wild ginger, it does not taste anything like ginger at all. Some people, like me, may not like the tuhau because of it stringent and strong smell. It smells like the small beetle insect called “Posisang” in local Kadazandusun dialect. However, recently I tasted the fried version of this Tuhau and surprisingly, it was delicious. In fact, it is sell quite expensive at the Tamu (Wet Market).

Knowing this, I decided to learn how to make the Tuhau fried version from my friend @kilathecla. It's not that hard to do and the ingredients cost me less than RM10.00.

The Ingredients

50 stacks Tuhau.
3 pieces of big Holland onion
1 cup of Borneo white chili.
5 buds of Bunga Kantan (torch lily)
1 cup of Anchovies.
1/2 cup of Ground nuts.
Salt to taste
Cooking oil

Instructions

  1. Clean the Tuhau, Borneo white chilli and Bunga Kantan. Then
    slice them into thin pieces about two inches.

  2. Clean the Anchovies and Ground peanuts.

  3. Heat the cooking oil in the pan and fry the Borneo white chili. Fry until its crunchy but do not overfried otherwise it'll get bitter. Then take it out. The purpose of frying the chili first is to make the cooking oil taste a little spicy.

  4. Fry the Tuhau with the same cooking oil. Tuhau took time to get crisphy. Wait for a while until it get chrispy, then take it out.

  5. Fry the Bunga Kantan to chrispy, then take it out.

  6. Fry the onion holland to dry. then take it out.

  7. Lastly, fry the Ground nuts, then take it out.

  8. Let all these ingredients to cool.

  9. Mix all ingredients and salt to taste.

  10. Put in airtight jar and store it at room temperature so that its can last for months.

Done! there you have it, the Fried Tuhau's recipe or Serunding Tuhau. This delicious Tuhau dish are eaten with rice and other menus.

Tips

  1. It is better to put salt to the slices Tuhau, Kantan flowers, Holland onion and Borneo white chilli borneo before frying them so that the taste seep into it. However, don't oversalt because the Anchovices itself is already salty.

  2. For ease of crunching onion holland, mix with a little corn flour and rice flour.

  3. In order to make it more crispy and durable, make sure the ingredients are fried thoroughly.

  4. You can also add ingredients other than the above ingredients such as papaya flowers, fried sliced ​​ginger and others.
