My Lunch - Influenced By Watching Australia's MasterChef Last Night

Last before sleeping I was watching Australia's MasterChef. I love to watch cooking shows. Last night they were being judged by Gordon Ramsey, I love him. They were divided into 2 groups and they were told to cook for 50 people one entree, main dish and dessert. I was rooting for the red team. Their menu was pork/shrimp dumplings, then crispy pork belly and ice cream with fresh and dried apples with caramel sauce for dessert. My mouth was watering.The red team won.

My version of the crispy pork belly! Actually we call it lechon Kawali, it is also pork belly boiled and then deep fried. Theirs they baked in slow then high heat but it is expensive. So we boiled the pork in water with salt and pepper till soft. Then punched small holes in the skin, then placed in the freezer. It is better if overnight but as long as it was dripped dry then placed in the freezer for a few hours.

Before cooking, heat the oil. Then as soon as you take out of the freezer place in the hot oil skin down. Have some kind of protection, usually a cover, Then cover the pot while it is being fried. After a while turnover also with protection because the oil splatters.

Then take out, rest a while, then chop into serving size. I cooked 1 kilo there was more but when I remembered to take a picture my mom and I already took some. But I did not eat much, just to curb my craving. We gave the rest to our helpers, about the amount in the picture.

The dipping sauce is soy sauce, vinegar, chopped onions and garlic with a touch of sugar. I did not put chili because I do not like hot and spicy. It was good. Hmm probably better than the one on the show last nighr, hahah.
