Hello friends of the farm in this opportunity I am going to talk about the last topic of the week the pheasant bird.

ORIGIN.


The pheasant is native to Asia, specifically from Borneo, Sumatra, Himalayas, south and west of China and mountains of Formosa (Taiwan), reaching the Old Continent through the Greeks around the fifth century BC. Its current name comes from the Greek word paisanos, which derives from Phasis, a river located in Cólquida, an Asian region located on the west bank of the Black Sea, from where the common pheasant would probably have entered Europe.

This race lacked ring in the neck, being the Romans who would spread their hunting and consumption by zones of Italy, France, Spain or England during the centuries of the Republic and the Empire.
In the Modern Age (XVI-XVIII centuries) it would be treated as an exceptional, exotic food, worthy of feudal lords and kings in European courts.
At the end of the 19th century a variety with a collar was introduced into North America from European lands and, from there, it arrived in Spain where it was mixed with the species without white plumage in the neck, creating different subspecies.

NUTRITIOUS PROPERTIES


The pheasant is a bird that provides high levels of protein, with 133 calories per 100 grams of edible portion, as well as low levels of fats and cholesterol (although this last characteristic can be modified depending on the culinary technique used to prepare it ). Most of the fat is concentrated in the skin (as in the duck).
Among the vitamins and minerals that it contains, those of group B in the former and phosphorus in the latter.

PRODUCTION.


There are three different types of production and commercialization of pheasants: for the consumption of their meat and eggs, of preserves of game (this species is considered like the queen of the birds of hunting by its rapidity in the flight), as well as for ornamentation of gardens, parks, zoos and hotels.
In Europe pheasants for repopulation are a constant demand, with Italy being the most significant importer with about 1,000 tons per year. At the apex of the consumption of this species are also Spain, Belgium, England, Denmark, Germany and Holland.

In recent years, as with quail, certain South American countries have found in their climatic and environmental conditions the ideal characteristics for the breeding of pheasants. In this sense, Argentina is one of the most outstanding countries, coinciding with its period of greatest production with scarcity in the European continent, due to its location in the southern hemisphere.

CHARACTERISTICS:


The common pheasant or Phasianus colchicus is a terrestrial bird native to the Asian continent, belonging to the family of the Phasianidae, Galliformes order, which has a fine and delicate meat much appreciated in gastronomy.
It is a species of those considered small game or feather hunting, although currently the most widespread variety in Spain is the Phasianus torquatus or Collar Pheasant, usually raised on farm and which receives this name for its characteristic feather ring white around the neck. The pheasant is a bird of great precocity in its bodily development and very rustic (easy to adapt to different climates). It has a strong and arched beak, as well as a long tail of 16 to 18 feathers and short wings, wide, rounded, adapted to get a vertical flight that reaches 10 meters in a few seconds, facilitating its flight in times of danger.
There is a large difference in plumage size and coloration between males and females. The first can reach 90 cm in height while the second only 63. Regarding the color, the male has bright colors, different depending on whether it is one or another variety (more than 40 varieties of pheasants are known). Thus, the shades will go from red to brown, going through yellow, blue, greenish and even black spots. The Collar Pheasant has a reddish face, greenish tones on the neck with a white collar, reddish thorax, light tail with dark streaks and chest and a striped or mottled back. However, the female has plumage in light brown tones with touches of dark brown. The legs of the two genera are gray.

VARIETIES


There are several breeds of pheasants accessible throughout the world. Although these breeds are not appropriate for commercial pheasant farming businesses. A portion of those breeds are appropriate for egg generation and some are perfect for the creation of business meat.
There are more than 40 varieties of pheasants, it being very difficult to find absolute purity standards, since they are hybrids selected by the human being or nature itself from the Phasianus colchicus variety.

REPRODUCTION AND BREEDING


The pheasants in freedom reproduce during the spring months, since it is a photosensitive animal, that is, it needs numerous hours of sun in its first days of life.
The nest is usually made on the ground, since they inhabit large areas of crops (cereals). After the laying of 8 to 12 eggs the incubation lasts between 22 and 24 days.

Once the shell is broken, the pheasant is able to fly after 11-12 days, being the only species of terrestrial bird that reaches its sexual maturity, definitive size and plumage, before the first year of life.

ON THE MARKET


The pheasant can be found throughout the year in the markets of the entire Region of Murcia in fresh, plucked or cut, although in some cases you must make an order to acquire it. However, if you intend to get a hunting specimen, it is necessary to wait for the autumnal months, when in certain areas of the country the hunting bans of this species are lifted for a short period of time. When choosing pieces in an optimal state for consumption, fleshy pheasants are recommended, with soft claws, flexible legs, intact and without breaks.
The female specimens have a meat with greater flavor and smoothness than the males, although if you want pieces of fine and juicy meat it is necessary to go to the younger pheasants.
The pheasant can be kept in the refrigerator a few days before consumption, both in the farm and in the hunting varieties. It also supports freezing (6 months), even pieces without plucking, being advisable when they are going to consume plucking before the completion of thawing.

IN THE TABLE


The pheasant belongs to the so-called game birds or feather hunting, highlighting elaborations that range from the complexity of stews and stews to the simplicity of an iron or grill.

Thus, some of the recipes that stand out in tables throughout Spain present the roasted pheasant (accompanied with oranges, carrots and watercress), casserole, flavored with brandy or wine (but also with cava), stew, in pepitoria, with sauce of grapes, stewed or stuffed. In addition, it combines perfectly with other meat foods such as bacon, with vegetables such as onions and peppers, as well as mushrooms and fruits of a certain acidity that contrast their flavor, such as apples or pears.
