Catch and cook Ocean Whitefish and Treefish - How to make Spicy Chinese Fish Stir-fry (Locally Caught Southern California Fish)

Yesterday we went out to go catch some fish to eat. We went on a half day trip but we didn't do so well, we only caught 2 small whitefish and one treefish. So I cleaned them all up, filleted them, and decided to make a chinese stir fry fish.

The ingredients needed:

One stalk of celery, 5 dried chili peppers, 1 serrano pepper, 6 pieces of fivespice stars, your choice of a fish seasoning (preferably spicy), sesame oil, ginger, garlic, on strand of a green onion, soy sauce, hosion sauce, and of course 4 small fish fillets chopped into cubes.

Here is the fish that will be used in this dish

So what we're gonna do first is fillet these fish.

Next, cut the fillets into 1 inch by 1 inch cubes. Season with your own preferable fish rub. A good guideline is salt, pepper, and cayenne pepper.

Next, chop your stalk of celery, 2 cloves of garlic, a piece of ginger, your green onion, and your serrano pepper. Put everything in a bowl.

Then take out your wok and on a medium high heat, pour some sesame oil. When it gets hot, add your five spice and dried red chili peppers. Cook until a smoke appears.

After that, add in those veggies you chopped up. make sure you stir the vegetables and all of the other good stuff as well every 30 seconds or so. Then add 1/2 tbsp of soy sauce and 1/2 tbsp of hoisin sauce. Stir and cook it all together thoroughly.

Then, add your fish to that mic in the wok. Cook and stir the fish around for about 5-6 minutes until the fish appears to be cooked well but not too dry for burnt. 5-6 mintues of cooking on a medium high heat should do the job, if you have a little more fish, I would recommend cooking for a tad bit longer.

After that, pour out into a bowl or plate and serve
