Sweet and sour clam soup recipe.

Ingredients.

  • 2lbs clams.
  • 1 litre of water.
  • 2 tomatoes.
  • 1 sour star fruit.
  • Dry onion, ginger, dill, spring onion, laska leaves.
  • Fish sauce, salt, sugar, black pepper.

Instructions.

Step 1:
Place the clams in a large bowl, cover with cool water and soak for 1 hour, the helps the clams to realease the sands inside.
Step 2:
Bring 1 litre of water to a boil in a pot over medium high heat, add clams , when the shells are open, remove clams from the pot and pour them into a strainer, then drain a boiled water into a bowl. Set them aside.
Step 3:
Slice the tomatoes into wedges, heat oil in a large saucepan, add some minced dry onion and fry till golden. Add some tomatoes and stir for a couple of minutes until tender, add the boiled clams liquid, picked sliced sour star fruit and bring to a boil for about 10 minutes, add more water, 1 tablespoon fish sauce, 1 teaspoon sugar, 1 teaspoon salt.
Step 4:
When the soup boils, add the shells are open, more black pepper and ginger cut into very fine julienne. Garnish with dill, spring onion, laska leaves. Serve hot with cooked rice.
