Jezanne's Recipe #17 : Mini Pandan Butter Sponge Cake

Hello my fellow steemians, today i would like to share with you this ever so fragrant ''Mini Pandan Butter Sponge Cake'' recipe. Don't be fooled by the green colour. It's light, fragrant, and fluffy.

Mini Pandan Butter Sponge Cake
(Makes 8 petite rectangular size cakes)
Ingredients:-
⭐ 3 egg yolks (large)
⭐ 30ml coconut milk or fresh milk
⭐ 20ml pure pandan extract (blend 5 pandan leaves with 1/2cup water)
⭐ 1/2 tsp pandan paste
⭐ 40g butter
⭐ 50g superfine or top flour + a pinch of salt (sieved together)

Meringue:-
⭐ 3 egg whites
⭐ 45g castor sugar
⭐ 1/8 tsp cream of tartar

Method

Preheat oven to 110°C and line the base of the moulds with parchment paper or grease it with butter.

Place the butter, milk, pandan paste and pandan extract in a saucepan and stir till the butter dissolves, remove from heat.

Immediately add in the flour and quickly whisk to form a smooth batter.

Transfer the batter into another clean mixing bowl.

Add in the egg yolks, mix well until smooth and set aside.

To prepare the meringue – beat egg whites with cream of tartar until foamy, add in the castor sugar gradually. Continue beating until the foam forms stiff peaks.

Add 1/3 of the meringue into the egg yolk batter and use a spatula to fold until just combined and then gently fold in the remaining meringue 1/3 at a time until well combined.

Spoon the batter into the mould and fill each mould almost to the top.

Tap the cake pan on the table top about 2-3 times to release air bubbles.

Bake in preheated oven @ 110°C for 20 mins, increase to 120°C for 15 mins, 130°C for 15 mins and 150°C for 10 mins (or until thoroughly cooked, insert a toothpick to ensure that it comes out clean). Each oven temperature varies, so you may need to adjust your own oven temperature accordingly.

Turn off the oven and leave the cake inside the oven for 5 mins.

To remove the cake from the pan, drop the pan on the table top 2-3 times and allow it to cool for another 5 mins. Use a bamboo skewer to lift the cakes out. Allow to cool completely on wire rack.

The cakes will taste even better when eaten chilled!

Ooooo! Pandan! I’ve been looking for pure pandan extract but could only find flavoring! I might try your method and just blend. Does it not need alcohol to make the extract?

It doesn't need alcohol. Just blend it with water and you are good to go. Save the remaining extract in the fridge and try to use it within 1-2 weeks 😊
