Stuffed Eggplants.
Stuffed eggplants are one of my favorite meals.
Besides the benefits of eating eggplants, the most attractive thing is the almost endless possible variations to prepare them.
Around the Mediterranean Sea, you can find out different styles related to each region, from a spicy oriental plate to Italian tradition.
It is ok to use different types of meat or fish, cheese, vegetables, and legumes as well.
The limit is your imagination.
