Jackfruit

Jackfruit or Indian breadfruit is a plant of the mulberry family, a close relative of the breadfruit tree. Jackfruit is the national fruit of Bangladesh.

The fruit of the jackfruit is the largest edible fruit growing on trees: it is 20-90 cm in length and up to 20 cm in diameter, they weigh up to 34 kg. Their thick skin is covered with numerous cone-shaped protuberances.
Young fruits are green, they become green-yellow or brown-yellow when ripe, and when hollow they produce a hollow sound (immature fruit - deaf). Inside the fruit is divided into large portions containing a yellow fragrant sweet flesh, consisting of juicy soft fibers. In each lobule there is one rather large oblong white seed 2-3 cm in length.

The cut fruit has a pleasant specific smell slightly resembling a banana and pineapple. Along with the smell of fruit exotic, there is a light, almost imperceptible shade of artificiality in the bouquet, close to the smell of acetone (if you've ever tried very ripe bananas or melons - this shade is also present there). The rind has a specific, slightly unpleasant smell, and contains an adhesive latex, so it is recommended to grease your hands with sunflower oil or put on rubber gloves before cutting the fruit.

The overgrown fruit becomes brown and quickly spoils, but in the refrigerator it can be stored for 1-2 months.

The native land of the jackfruit is India (Eastern Ghats) and Bangladesh; Now it is most common in Southeast Asia and the Philippines. There are also plantings in eastern Africa (Kenya, Uganda). On the islands of Oceania and the tropics of the New World, in addition to northern Brazil and Suriname, the jackfruit is quite rare.

From the tree jackfruit build large houses, as well as produce furniture and musical instruments, as wood is famous for its durability and beautiful golden color. In the 19th century, the yellow dye that was obtained from the peel and from the trunk of a jackfruit tree was a very valuable commercial product. In Thailand, it was used for painting silks, cotton and monks clothes. The tree trunk also produces latex, which is found in the fruit itself and in leaves, has an excellent viscosity; from it they make very high-quality glue.

Choice, storage, use

Jackfruit rind should be greenish-yellow and undamaged. To the touch, it should be dense, but not firm. When the fruit ripens, the peel is stretched, becomes elastic and produces a subtle aroma. Too strong smell indicates that the jackfruit is already overripe. To clear the fruit, cut it along and remove the gum. Remove also the core and press on the peel to separate the pieces of fruit from each other. Cut the flesh with a knife and select the seeds. Jackfruit can be stored in the refrigerator for no more than 3-5 days, and in the freezer - up to two months.

Jackfruit can be stuffed with chicken, which will give the meat an exotic spicy flavor.

It is believed that the tree of the jackfruit brings good luck, because its Thai name means "support, help." Therefore, in many gardens around the houses grow trees savory. It is believed that due to the copper-green color (and copper is considered in magical metal in Thai folklore), the jackfruit seeds possess the properties of a talisman that protect the host from gunshot wounds and wounds inflicted with sharp objects.
