Pitaya or Pitahaya

Pitahaya is an unusual fruit. The first mention of it is found in the Aztecs and dates back to the 13th century. Eating the pulp, the Indians roasted the seeds, grinded them and used them for soup. Currently, it is grown in southern Mexico, in some countries of Central and South America, in Vietnam, as well as in Israel (in the Negev desert).

For outstanding appearance, the fruit is called "dragon fruit" (prickly pear). This bushy tree-like cactus, at the ends of the stems of which ripe juicy fruits. Flowers on it appear strictly on the first and fifteenth day of the month.
Depending on the type, the size of the fruit varies the color of the pulp (white, pink, purple), the color of the skin (from yellow to orange, from red to purple) and the texture of the fruit surface (with small outgrowths, with thin color scales). The flesh of the fruit is always filled with small black seeds, which are usually cleaned.

The taste of food is somewhat inferior to its appearance - not fragrant, unsaturated and slightly sweet.
Attractive-looking fruits of Pitahaya are actively used in cooking and before all in the production of various alcoholic beverages. Juice and pulp are added to the composition of sweets, ice cream, sorbets, yoghurts and various dairy products, from the pulp cook jam, sauces and jelly. Juice nourish is mixed with lemon and lime for the preparation of "summer drinks."

To prepare Pitahaya for consumption, the fruit is usually cut vertically into two halves. After this, you can either cut these halves into slices (just as a melon is cut), or scoop out the pulp with a spoon. Although the seeds of Pitaya are rich in valuable lipids, they are usually not digested unless they are chewed. The skin is inedible, in addition, it can contain pesticides.
