ADOBONG MANOK • Food Preparation

Hello everyone!

Today I will be sharing you the Adobong Manok or Chicken Adobo that I prepared for lunch.

Chicken Adobo is an authentic Philippine dish and considered by most as the national dish of the country. The taste is so distinct that you can’t compare to other meat recipe.

To prepare the Chicken Adobo, here it goes:

• half chicken (cut into your desired size, but not to small)
• 10 tablespoon soy sauce
• 5 tablespoon vinegar
• 8 cloves garlic
• 1 teaspoon black peppercorn
• 2 bay leaf
• 2 tablespoon oil
• 1 tablespoon sugar
• 1 cup water
• salt (optional)
• long chili (optional)

I usually cut the half chicken into 8, not so small and not too big just enough to cook the chicken on the right time. Wash the meat properly, then marinate for atleast an hour with soy sauce, half part of minced garlic, sugar and peppercorns.

After that, in a pan... put the oil and the other half part of the minced garlic, saute the marinated chicken then the marinate sauce will be added to the meat. Follow by water, bay leaf and for more aroma and flavor I add the long chili. When the meat is tender, this is the right time to bring in the vinegar. And if you preffer your adobo to be more salty, add some salt depending on your taste.

When the liquid all evaporates and meat is tender and oily, you’re done!

It is perfect for hot rice and more rice! 😂
You can taste all the flavors from the soy sauce, vinegar and garlic!
