Seafood stir-fry rice

Ingredients

  • rice (boiled)
  • red, yellow and green bell pepper
  • turmeric
  • carrot
  • onion
  • spring onions
  • garlic (minced)
  • ginger ( minced)
  • scent leave
  • curry leave
  • red and yellow scotch bonnet pepper
  • vegetable oil
  • your choice of seafood mix ( calamari, fish, shrimps, prawns)
  • salt and seasoning
  1. cut the bell pepper, scotch bonnet, carrot, onion and spring onion to strips and set aside

  2. season the seafood mix with season of your choice and I teaspoon of minced garlic and ginger, set aside.

  3. in a clean pot, add I cooking spoon of vegetable oil and heat up.

  4. add the onion and I teaspoon of minced garlic and ginger mix, fry for a minute.

  1. add the carrot stir fry for three minutes, then add seafood mix, turmeric Ad scotch bonnet pepper, fry for two minutes.

  2. add the boiled rice then some seasoning and salt to taste. Stir fry for three minutes then add the bell peppers, spring onions, shredded curry leaves and shredded scent leave and simmer for 2minutes.

  3. serve while hot.
