🍪🥕Carrot Cake Biscuits🥕🍪
🔳1/2 cup plain wholemeal flour
🔳1/4 tsp baking soda
🔳3/4 cup rolled oats
🔳1 tsp cinnamon
🔳1/4 tsp ground nutmeg
🔳2 egg white
🔳1 tablespoon coconut oil
🔳1 tbsp pineapple, fresh or tinned, crushed
🔳1/4 cup reduced-fat milk of choice
🔳1 tsp vanilla extract
🔳1/4 cup raisins
🔳1 medium carrot, grated
🔳2 tsp orange zest
🔳2 tbsp walnuts, chopped
Preheat oven to 180C and line two baking trays with baking paper.
Combine the flour, oats, cinnamon, nutmeg, and baking soda in one bowl.
In a separate bowl whisk together egg whites, oil, pineapple, milk and vanilla and add to the dry ingredients.
Stir in raisins, carrot, orange zest and walnuts.
Drop tablespoonfuls onto prepared trays, so you have approximately 12 biscuits.
Bake for 15 minutes.
Allow to cool slightly on tray before placing on a wire rack to cool completely.
Store leftovers in an airtight container in the pantry for 3-4 days.
