Ulog #87: Cajun Chicken Burger with Garlic Lime Mayo
Not many places do a chicken patty burger nowadays. You either get sliced chicken breast or boneless chicken thighs for a patty in most chicken burgers.
One of the reasons is due to the fact that it's hard to make a juicy minced chicken patty or it has fillers to make it more firm and thus as well, less juicy. So most places opt for a whole piece of chicken meat instead for their burger patty as it would lock in more juices when cooked well.
However at my burger food truck, I've tried and perfected a recipe that uses mince chicken patty. How awesome is it? Just take a look at this beauty.................
I use purely chicken meat for this and no fillers whatsoever. How does it maintain a patty shape? I use cajun spices consisting of smoked paprika, some Italian herbs, salt, cayenne pepper, and some other stuff :D
I bind it together with carotina oil which gives is a lovely golden yellow hue to it. It's packed with flavor and only takes about 3 minutes total to cook it. Topped with a slice of tomato and accompanied with a garlic lime mayo it really gives it a great flavor profile.
All these goodness is sandwiched in between wholemeal buns that's buttered up and toasted.
Simply delicious and one of the best chicken burgers you'll ever have. That I can promise! :D
