Crispy Mushrooms + Peanut Sauce

Little comfort food once in a while isn't so bad when you are making it for yourself :)
I don't recommend these being part of your daily diet however they are pretty darn good on those days you really just want something fried ;) haha

Ingredients For Peanut Sauce:

• Unsweetened Peanut Butter
• Coconut Aminos or Liquid Aminos (or any stir fry sauce you prefer.)
• Onion Powder

Directions:

• In a small bowl or dish add your small scoop of Peanut Butter, start small and if you need more add as you go.
• Like the Peanut Butter add small amounts of your Coconut Aminos, plus a small splash of water just to thin the Peanut Butter out a bit. Keep adding Coconut Aminos and small splashes of water until desired taste + consistency.
• I also seasoned mine with onion powder but that is completely optional.

Ingredients for Crispy Mushrooms:

• Desired Amount of Mushrooms + Whatever kind mushrooms you want. ( I used baby bella but oyster are really good for this)
• Spelt Flour
• Onion Powder
• Salt
• Paprika
• Cayenne
• Pepper
• Grapeseed Oil for frying

• To fry mushrooms with a "skin" like this you need a combo of wet + dry batter*

• Start heating your oil first! And use enough oil to allow these guys to really fry.
  -Use flour as your base (I used the spelt flour from @onedegreeorganics) then season as you wish. I used all the spices listed above adding them as I tasted a bit.
  -Add small amounts of water and make sure your wet batter isn't too liquidy, and dip. It just needs to stick to whatever you are dipping in the batter.
• Then roll in dry batter and straight to the hot oil they go. Fry for about 3-5 min or until golden/ brown.
• Allow the excess oil to drip onto a paper towel then serve on top of quinoa with a bit of Green Onions and Sesame Seeds if you have any!
