Strange cloudy, warm and windy weather isn't something we expected from winter. We wished for a cold, but snowy days to kill all the germs around us. But hey, now I can spend more time in the kitchen without feeling guilty while testing my new oven. 😊

A last-minute realization, that my best friend is having her birthday, and a quick moment to check the pantry if I have it all for a surprise was enough to become creative.

While the girls were busy discovering some new old toys, which I put in their room, I was able to start the magic. I found one amazing recipe online to make a cake dough. Just eggs, flour, sugar, milk, water, and baking powder was enough. I only changed the recipe so much, that I replaced vegetable oil with milk. I must say, I was amazed with the result. The cake dough which I usually buy for making a cake is now in the past for sure.

While the dough was baking I was scared... It didn't look as I hope it will, and I was holding my fingers crossed through the whole time. Luckily at the end, it looked fluffy and light, and it smelled amazing.

When I was thinking about the filling I was juggling two ideas through my mind. A fruit cake, with canned goodies, or a simple but luscious Nutella cake with bananas.

You already know my decision by looking at the photo above. But still. I mixed the mascarpone cheese, with Nutella,

and I whipped some cream with vanilla sugar to make two separate fillings.

Then I peeled and sliced some bananas. And for the final touch, I was warming some milk with rum to soak the cooled cake dough.

Exchanging the layers I made it happen and finished it with some coconut flour to hide all flaws.

The result was apparently delicious because it disappeared soon after candles were blown. I know that it could be better. I know what would I do differently next time. But I am not regretting making one. Especially when I made it as a surprise for a person who means a lot to me.

So if you read my post today I hope you can stay away from the sweets. 😊 I must say I am really struggling with myself. But luckily it's time for bed, so enough food for me for today... 😉

And just a funny thing for the end I will share with you a thought, which my coworker told me today: "I am on two diets, just because I am not full enough after just one." 😊 It's lost a bit with my poor translation, but still, I think you got the idea what I wanted to say to make you smile.
