Filipino Cuisine at its Best (Part 1)

It is often said that the best way to know the culinary habits and specialty of a nation is to sample what they have to offer. My country, the Philippines, has all of these mouth-watering dishes that any connoisseur of good food cannot resist. Why? Because Filipino food comes in different colours and flavours and is actually a by-product of different cultural influences from other nations that once colonised the country. Our unique cuisine has captured and blended the taste of the East and of the West into one culinary trademark that is all-Filipino.

It is often said as well that a way to a man's heart is through his stomach. My husband has been my "official taster and critic " of my experience in the kitchen. Like I mentioned in my previous post, ever since I moved to Australia, I have always craved for Filipino food. How could I not? I grew up eating them and even though coming to Australia has somewhat changed my diet, I still would find a way to satisfy my cravings for my own Filipino food. Since I don't live in the city where there is quick access to Filipino restaurants, I have no choice but to learn how to cook some of them, since the other dishes I had already learnt how to cook from when I was still a child.

The following are some of my Favourite Filipino Dishes:


Pinakbet
It is an Ilocano dish that is a boiled mixture of different vegetables. The main ingredients are string beans, pumpkin, eggplant, ampalaya (bitter melon), and okra, sautéed in onion, garlic, tomatoes, bagoong (shrimp paste), and minced meat or diced pork.

Paksiw na Bangus

It is a popular Filipino dish of fish or meat, which is cooked in vinegar with salt, peppercorn, chili pepper garlic, and ginger.

Lumpia
This Filipino dish, usually served as an appetizer or eaten as "merienda" (afternoon tea), is a mixture of chicken, fish, pork, vegetables, and spices, that is wrapped in a wrapper and formed into small rolls. There are variants of this dish, such as lumpiang shang-hai (deep fried lumpia served with soy sauce), lumpiang sariwa and lumpiang ubod.

Ginataang Kalabasa and Sitaw (Pumpkin and Green Beans in Coconut Cream)

It is a Filipino specialty dish which makes use of coconut cream or milk, pumpkin and green beans or string beans. This recipe has many versions because it can be cooked with different types of meat, such as diced pork or chicken, prawns, lobster or crab meats, smoked fish, pork crackles, and minced meat (beef or pork).


Sinigang
It is said to be an original Filipino concoction, which means it is not a product of the blended taste of Eastern, Oriental and Western cultural influences. Hence, the pride of Filipino cuisine. It is a dish of pork, beef, prawns, or fish mixed with vegetables in a broth flavoured with acidic fruits such as sampaloc (tamarind), santol (cotton fruit), kamias (tree cucumber or tree sorrel), or bayabas (guava).

The dishes look interesting, I've never had Filipino Cuisine. The dishes have lots of veggies, which I need to eat more. Veggies were always a side dish, the focus of the meals was and still is the meat and potatoes. I'm trying to add more veggies.

Yes, we Filipinos love our vegetables. I think it's because any type of meat can be very expensive so we use more vegetables as the main ingredients in our cooking and meat is only added to add a bit of flavour. Also most Filipino dishes have broth or soup because we eat them with rice. They are delicious but can be unhealthy if eaten with more rice since rice is rich in carbohydrates, but of course, if eaten in moderation, then it's fine. But sometimes I eat more than 1 cup of rice because of how much more-ish the dishes are.

I'm working on adding more veggies to my diet. I'm not a fan of rice, potatoes are my carbs with my meals.
