Cooking with @fat-elvis - twice baked chicken potatoes
Hey foodies.
Here's another simple and delicious recipe. It can be a light lunch or served as a side dish.
Start with cooled down or leftover baked potatoes. Cut in half and hollow them out leaving th about 1/2 inch thick.
Put the core of the potatoes in a dish, mash, and mix in sour cream, garlic powder, chopped onions, and cheese, I used white old cheddar.
Cut up a chicken breast into small pieces and brown in a skillet.
Put the browned chicken in the bottom of the hollowed out potatoes, and pack the mashed mixture on top. Then bake for about 1/2 hour at 350*F.

Sharp old cheddar. I Love a good hard cheese. Well, all cheese I guess but an aged Edam or cheddar is my choice, especially for a recipe like this that takes a bold cheese.
