How cute is this dish? This is a dish specially for kids! An envelope filled with only healthy ingredients. Kids love it when they eat a meal that is prepared interesting to them.

My kids are luckily very easy eaters. They eat all sorts of veggies and this dish just makes it even more fun to eat. The envelope has a filling of whole-wheat pasta, red and green bell peppers and mushrooms. To give it flavour, I added curry massala.

Ingredients

1 large onion
2 cloves of garlic
1 teaspoon curry massala powder
250 gram mushrooms
200 gram green and red bell peppers
300 gram whole wheat fusilli pasta

Chop the ingredients. For the onions and garlic, you can use a food processor.
Take a frying pan, add some liquid butter and fry the onions, garlic, curry massala and salt for about 10 minutes.

Now add the red and green bell peppers and stir for 3 minutes. After three minutes, add the mushrooms and stir for 5 minutes.

Boil water and cook the whole wheat fusilli pasta for 7 minutes. Then drain it and add it to the frying pan with the rest of the ingredients.

The envelope

2 large eggs
A pinch of salt
1/4 teaspoon white pepper
1 teaspoon potato starch
1 teaspoon water

Beat the eggs and add the other ingredients to the eggs and mix it well.
Take a pancake pan and grease it with a bit of sunflower oil.
Heat is on low fire and pour the egg mix. Wait till its totally loose from the pan.

You can wrap the Curry pasta how you like it.

I like both ways, but the envelope is certainly an eye-catcher.
