Today I bring you some of the most famous South American dishes in the world, many countries dispute the origin of this culinary creation, but what we can not deny is that Venezuela is the Caribbean country with more variety of presentation of the same recipe, I'm talking about the arepa that is manufactured on the basis of a pre-cooked corn flour and its texture is unique, it is also very versatile as a dish because the arepa can be filled in countless ways. Today I bring you the most classic recipe within the Venezuelan arepas, it is the famous pepiada Queen but in its vegan version. Join me in preparing this delicious Caribbean recipe.

My secrets INGREDIENTS

(for 4 portions):

Ingredients for the Arepa

♡ 250 ml of water

♡ 200 gr corn flour for arepas (I used PAN)

♡ 1 pinch of salt

Ingredients for the "pepiada queen" filling

♡ 50 g textured soybeans (medium size)

♡ 1/2 onion

♡ 1 and 1/2 avocados

♡ 1 and 1/2 tablespoons veganism

♡ Salt and pepper

PREPARATION

Preparation time: 15min

Cooking time: 55min

Total: 70min

Our first step will be to prepare textured soybeans, for this we will have to moisturize, it is important that once this moisturized soybeans must remove all excess water present, although this step does not take long is customary to do it first to save time in any preparation.

While the soybean is hydrated we can continue with the preparation of the onion, for it we will wash very well the onion and we will cut in small dices, then we choose our best frying pan, we add a generous jet of olive oil and we proceed to fry the onions, this action we will carry out to slow and average fire, I recommend you to use abundant olive oil.

Then we return to our textured soybeans, if this soft, is the amount of draining it very well removing the moisture that more we can to incorporate immediately to our onion, we take to medium heat to give a heat stroke and then to low heat until we see that they begin to crystallize and brown.

Now comes the time to prepare the dough of pre-cooked corn flour brand P.A.N the idea is to knead, just add water and a piece of salt, this flour to be pre-cooked is very easy to hydrate, we just knead for a few minutes and then let stand.

It is time to remove our onion, now we will devote ourselves to continue with the peeling of avocados that will immediately become a pure thanks to the help of a have with the crushed fruit very well. But it must be only half of the avocado the other half we reserve it to be chopped into slices. The avocado that we have turned into pure will be incorporated into the mixture of onion with textured soybeans. To the same mixture, we will add vegan mayonnaise. And we mix vigorously so that all the ingredients are incorporated.

Now we only have to fill the arepas that we open cooking, in a plate, the preparation of the arepas is very easy, we only have to take a portion that fits in our hands, with it we will make a ball, and then we crush it to give it a flattened circular shape, we take to the plate and we hope that they brown on both sides.

The next step will be to carefully open the arepas in half and proceed to fill and finally add the slices of avocado that we reserve.

I love arepas! Reina Pepiada is awesome indeed, but sadly for the vegans, the best ones include some sort of meat.
