My dear foodies,

Today I bring you a classic of Italian food, but in its vegan version which is still as rich as the original. Today the vegan food has been gaining ground in the culinary world especially in the typical Italian foods that are very famous vegan pizzas as well as pastas. So don't miss out on this food masterpiece so that you can taste a rich, healthy, low-calorie dish at home.

Vegan Lasagna

My secrets INGREDIENTS

♡ 1 kg. of zucchini

♡ 1 kg. of eggplant

♡ 50 ml. olive oil

♡ 2 garlic

♡ Fresh chives

For the bechamel:

♡ 1 liter of vegetable milk (without sugar)

♡ 40 g. white wheat flour

♡ 3 tablespoons of oil

♡ 1 pinch of salt

♡ 1 pinch of nutmeg

PREPARATION

Preparation time: 35min

Cooking time: 30min

Total: 65min

Clean the zucchini and eggplant and cut them into slices. For this step, Cutter and grater of vegetables

Heat a frying pan, add a little oil and start browning the eggplant slices in batches. Repeat the process, adding oil again in each batch until all the eggplant slices are cooked.

Now cook the zucchini, following the previous procedure.

Prepare the lasagna paste according to the manufacturer's instructions.

Meanwhile, prepare the bechamel sauce. Heat the vegetable milk in a saucepan and in a frying pan, toast the flour with the oil. When the flour is toasted, add the hot vegetable milk. Stir constantly with a few sticks until the bechamel thickens slightly. at the end add a pinch of flour.

Heat the oven to 220º.

Assemble the lasagna. Start by placing a little bechamel on the base, place the first layer of pasta, aubergine, and bechamel. Continue with another layer of pasta, zucchini, and bechamel. Repeat the process until the vegetables are finished. Finally, cover with the rest of bechamel.

Bake at 220º for 10 minutes.

To finish, chop the garlic and the fresh chives and mix with 50 ml. of oil.

Serve the hot lasagna with the garlic and chives oil to accompany.
