Today I bring you a very practical and delicious recipe, and of course vegan, soy has become a super food for us vegans which have brought a number of dishes and desserts that we can prepare in different ways varying flavors and textures, so today we will prepare a delicious vegan cheesecake, there are no limits to the creation of new recipes and less if they are recipes that contain products of animal origin that can quickly be replaced by soybeans or aquafaba, so simple and fun is vegan life, eating everything we want and competing in many cases with recipes that contain products of animal origin. My secrets INGREDIENTS

(for 6 portions):

♡ 300 g natural soy yogurt

♡ 200 g soy cream

♡ 100 g of margarine

♡ 100 g sugar

♡ 60 g soy beverage

♡ 10 g of cornstarch

♡ 20 g vanilla aroma

♡ the skin of 1/4 of a lemon

♡ 5 g salt

♡ blueberry jam

For the base

♡ 200 g digestive biscuits

♡ 70 g margarine

PREPARATION

Preparation time: 20min

Cooking time: 80min

Total: 100min

The first step will be to prepare the basic mixture for the cheesecake, which we will crumble and crush the biscuits very well and then in a frying pan we will melt the margarine, in a bowl we must mix very well the melted margarine and the biscuits until obtaining a homogeneous mixture.

We will choose the mold where we will prepare the cake of cheese and with paper to bake we will cover the mold, we leave ready the mold with the mixture base that will have to arrive until the half of the mold, then we preheat the oven to 190 degrees centigrade.

While the oven warms up, we are going to continue with the filling of the cheesecake, for it we will melt the rest of margarine and we will pour it in a bowl, while it rests a moment the margarine, we will heat the drink of soybean, but before heating we will dissolve the part of cornstarch, I recommend you to dissolve the cornstarch in a cup with a little water to avoid the generation of lumps, or if you prefer to use a mixer to eliminate any trace of lumps.

The next step will be to add the previous mixture yogurt, sugar and take advantage to the season with vanilla and salt, mix well so that the vanilla breaks its aromatic particles in the preparation and pour into the mold without reaching up.

The next step is to bake for about 80 minutes at 180 degrees Celsius. Once the time is over we take it out and let it rest until it cools down, probably the mixture is a little liquid, but don't worry, it will compact when it has cooled down.

When it's totally cold it's time to unmold the vegan cheesecake, and just subtract heat a little blueberry jam in order to better cover the cake.

And ready we have a delicious recipe that we can use as an aperitif on a Sunday afternoon after waking from the siesta, or to take to a picnic, or to share with our friends visiting the house or with our family.
