There is another type of sauerkraut but the real one, the one that is really healthy is the one that is left fermenting for several days. It implies that we need to work for several days? no, it is done alone, it takes time but little work.
Before doing it seemed very difficult, but the truth is that it is super simple and I do it again and again.
I recommend that you do it, besides being rich it is good for your health.

Ingredients

♡ 1 white cabbage (no more than 1kg)

♡ 3 carrots

♡ 6 radishes

♡ 1 beet

♡ Brine

♡ Ginger

♡ 4 cloves Garlic

♡ 3 Rosemary twigs

♡ Bottle 5 liters and other smaller to pack

Steps

1 We select the vegetables. We wash them.

2 Cut the cabbage finely.

4 Grate the beetroot and carrots.

5 Brine: dissolve 2 tablespoons of salt in 1 liter of water. mix well.

6 Once cut all the vegetables mix them and begin to put them in the bottle of 3 liters.

7 It is necessary to press well so that there is little air. The compaction together with the brine guarantees an adequate fermentation.

8 Press until the bottle is full, not completely because then you have to put the brine.

9 Now is the time to incorporate the brine.

10 Cover with a whole cabbage leaf to prevent the vegetables from floating with the brine.

11 Place something heavy on top. Underneath the jar put a plate or a container that contains in case the liquid spills.

12 Leave to ferment for at least 2 days. The more tender the cabbage. Then take out the contents, filter it (keep the brine), mix again and add grated ginger, grated garlic, and rosemary in branches in layers. Add the brine again and wait at least 2 more days (2 to 6 days).

13 Then add the condiments and leave to ferment for 2 more days, filter the liquid and remove the rosemary branches. It is now ready to be bottled in the previously selected bottles.
