Onion Uttappa!
Hi Friends... Here I am with a recipe for a delicious Dosa, called Uttappa or Uttappam, which is a well known South Indian cuisine.
To start with...
Soak 1 cup dosa rice and 1/2 cup black gram Dal for 6 to 8 hours. Grind to a fine paste, add salt and also water if needed (it should not be too thick or too thin),and keep covered for again 6 to 8 hours for fermentation. This should increase in two to two and a half times in volume.
Note:
While grinding this Rice and Dal, add one handful of Poha or the remaining rice of the day. Or we can even add a pinch of backing soda or bit of yeast, for fermentation. Adding any one of these things makes the batter smooth and the uttappam will turn out very pluffy and tasty.
Now chop these things into fine pieces. Onion, tomato, coriander leaves and green chilly,as shown in the photo below.
Add this to the batter and mix well.
Now take a non stick pan, smear a little coconut oil and take the uttappams one by one. Have to fry on both sides!.
When the first side cooks well, then turn it to the other side.
Yummy tasty Uttappams are ready to serve!!...
Serve hot with coconut chutney or tomato sauce...
