Necessary products for dough:
100 ml of lukewarm water
20 grams of fresh yeast
2 tablespoons of sugar
200 grams of yogurt
2 eggs
60 grams of butter, spilled and chilled
700 grams of flour
20 grams of dry milk
2 teaspoons of salt

500 grams of ricotta
fresh herbs: savory, mint and parsley
salt and pepper to taste
Preparation:
Dissolve yeast and sugar in lukewarm water.
Beat eggs with yogurt.
Melt butter.
Mix in a large bowl of 400 grams of flour, salt and dry milk. Make a well in the middle. In the well, pour all the dough products and mix with a wooden spoon until you get a smooth, thick slurry. Add the remaining flour and mash a soft dough.
Put the finished dough into a large, clean, slightly oiled olive bowl and cover it. Leave it for 1 hour in a warm room while doubling its volume.
Put the finished dough into 4 parts. Roll each part into a rectangular crust of ½ cm thick and cut long strips.
