El día de hoy quiero hablarles acerca de algo súper interesante que aprendí en estos días.

Al comer podemos identificar los 4 sabores básicos que son: dulce, ácido, salado y amargo. Pero existe uno que es más difícil de describir, éste puede ser detectado por todas las papilas gustativas de la lengua y otras zonas indistintamente de su ubicación.

Se pueden identificar los sabores de la mayoría de los alimentos, pero... que hay del queso, las anchoas, los tomates, el jamón... ¿podríamos decir que son salados, dulces, ácidos o amargos? Ya lo creo que no. Entonces, ¿que sabor tienen? Hablo del Umami, viene del vocablo japonés que significa: sabor agradable, sabor delicioso. Y se utiliza para describir alimentos que tienen un sabor pronunciado e intenso, su gusto es sutil pero prolongado e intenso. Induce la salivación y una sensación aterciopelada en la lengua que estimula la garganta, el paladar y la parte posterior de la boca.

Existe un producto que es casi Umami totalmente puro, se le conoce como Glutamato Monosódico, Ajinomoto o Sal China y es muy utilizado en la comida Asiática. Éste no demasiado sabroso por si solo, pero es un realzante de sabores de gran cantidad de alimentos al igual que la sal, especialmente cuando se aromatizan con otras especias.

There is a product that is almost totally pure Umami, it is known as Monosodium Glutamate, Ajinomoto or Chinese Salt and is widely used in Asian food. Como ya lo mencioné hay alimentos ya ricos en Umami naturalmente como: la salsa de soja, carnes curadas, verduras, pescados, mariscos, setas comestibles, hortalizas como tomates, espinacas, y los que mencioné anteriormente.

En el año 1908 un científico llamado Kikunae Ikeda de Tokio, fué quén descurbió que el glutamato monosódico era el responsable del sabor del caldo de algas Kombu, y allí le dió su nombre.

Quiero agregar que el glutamato es precisamente una sal y por ello se toma como un condimento.
