Chili for the rain

I woke up this morning and knew it was going to be a sleepy start to the day. Gray clouds lingered in the sky and the sun refused to shine. The forecast predicted heavy rain by 5 p.m. and I was itching to get a run in before the downpour. J and I set off at 5:30 for a three mile run and made it back without feeling a drop.

The big gray clouds needed to burst at some point and I was planning a chili dinner to bring in the fall storm. The minute I started dinner, I could hear the steady stream of rain falling from the sky.

Here’s what you need:

• ground turkey or ground chicken
• 1 small white onion
• 3 cloves of garlic
  (Brown ground turkey or chicken in with your onion and garlic)
• 2 cans roasted diced tomatoes
• 1 can corn
• 1 6oz can of tomato paste
• 2 bay leaves
• 2 tsp chili powder
• 1 tsp paprika
• 1 tsp cumin
• 1/2 C–1 C chicken broth
• 1 Tbsp brown sugar

(Combine these ingredients in your kettle and begin to heat through. Add your ground turkey or chicken mixture and continue to heat. Make sure to take out the bay leaves before serving. Feel free to increase or decrease spices and add veggies of your choice.)

Looks like this sleep day is leading into a sleepy night in. At least our tummies are full and satisfied.
