Pasta salad is one of the easiest, quickest and most colourful vegan dishes ever. This summer version with strawberries and green peas is so simple, you need only few ingredients. Of course you can use other fruits instead of strawberries, like pineapple, blueberries, kiwi or grapes.

This salad is perfect to take with you to work, uni and school or birthday parties, barbeques, etc. I'm sure your family and friends will love it - enjoy!

Ingredients

For the salad

• 500 g whole grain pasta (or gluten free)
• 250 g curly endive or another green salad of choice
• 300 g fresh strawberries
• 250 g green peas (fresh or canned)
• 1 yellow bell pepper
• handful of roasted pumpkin seeds

For the dressing

• 8 large strawberries
• juice of 2 limes
• ½ tsp salt or to taste
• ½ tsp fresh pepper and garlic powder or to taste

Instructions

1. Cook pasta according to package instructions.
2. For the dressing, combine all ingredients and mix them in a food processor.
3. Wash and cut the salad, strawberries and bell pepper and place everything in a bowl.
4. Drain the pasta, let it cool down and add it to the salad together with the roasted pumpkin seeds.
5. Add the dressing, mix well and enjoy!
