"Quick" Slow Cooker, Beef Stew - Winter Comfort Food.
All the hearty, goodness without the hassle. This Beef Stew is my go to meal to make when I feel like a having a something substaintial without any back breaking effort. We all have those days where cooking turns into a chore after a long day and the last thing you want to do is slave away in the kitchen. The benefit of cooking with the slow cooker is you can just throw what ever you want in there and wait a while and then its done!
This is my easy version of my Irish Beef Stew that I make. I once made my proper Irish Stew for a family dinner and I impressed my brother who is a trained chef! I will have to make a post of the recipe later but in the meantime here is my "Quick" Slow Cooker Beef Stew recipe.
Ingredients
Serves 6 people or
in my case 2 people for 3 days
Onion x 1
Carrots x 2
Cellery x 1 1/2 cups (chopped)
Chicken Stock - 500mls
Apple cider - 250mls
Chuck Steak or Stewing Steak 500 grams
Cumin seeds - 2 teaspoons
Thyme (dried) - 2 teaspoons
Dried Bay leaf - 2 leaves
Salt and pepper to taste
Olive oil - 2 Table spoons
Method
Turn Slow Cooker on high setting.
Pour Olive oil into Slow Cooker
Chop Carrots (I like them cut thick)
Rough chop Onions
Rough chop Cellery
Cube Beef roughly into 1 inch pieces.
Add everyone to the Slow Cooker.
Pour in Chicken Stock
Pour in Apple Cider or a can of Beer. (This is Homebrew Apple and Feijoa Cider from my Aunty @maorinesian)
Add in Cumin seeds, Thyme, Bay leaf with Salt and Pepper.
Give the pot a little stir and leave for 2 - 3 hours.
After 2 - 3 hours are up you will start to smell the heavenly scent of a home cooked meal. The only work done was to cut up a few veggies and put everything in a pot.
Here is the final result. Because the veggies and meat are so chunky it makes the meal really hearty and filling but that doesn't stop me from dunking a slice of buttered bread in the soupy goodness.
This much food lasted 3 days for 2 people. So that means I didn't have to cook for another 2 days after making this. I love how convenient it was to just take it out of the fridge and heat it up in a bowl and have it ready to eat in minutes. Now THAT'S fast food!
