Vegan Swiss Chard Coconut Soup - Keto friendly

Soup surely is the most comforting food one could find, whether it's a thick broth or a clear light consomme.
My Granny and later my Mom made the best soup from whatever was in the refrigerator and the garden; mostly hearty broth like soups. The base would always be either dried split peas, red lentils, barley or dried beans, with the addition of meat or chicken, loads of vegetables and a handful of noodles. Of course that is the kind of soup I made my family when my children were growing up; accompanied by freshly baked scones or home-baked bread, this is a meal fit for a king; well in my eyes at least, as I love soup!

Chicken Soup would be simmering on the stove top when anyone in the house went down with the flu, and is said to assist with speedy healing. I've made many a pot of soup from the Sunday leftover Chicken roast and that carcass that's still full of meat, certainly makes the best chicken soup!

Lighter soups make perfect starters - some of my favourites are Cream of wine & Mussel Soup; cold soups like chilled Tomato & Basil Soup or a simple Spanish Gazpacho.

Today however, I'd like to share with you one of my new favourites based on a recipe I found in a little book Hubby bought yonks ago - 500 Soups, the only soup compendium you'll ever need, by Susannah Blake, and that is a Swiss Chard Coconut Soup. (The author made a Spinach & Coconut Soup, I slightly adapted her recipe with some of the spices.)
With hubby on the Ketogenic diet, I've been visiting Granny Google on a daily basis and was quite chuffed when I found tons of Keto friendly and Vegan recipes in this little book I'd forgotten about.
As we're starting to feel the chill of Autumn breezes, soup will be served more often in our home!

Spinach is one of the vegetables that many either have a love or hate relationship with; even Popeye the Sailor Man still has difficulty convincing little ones that spinach is good for them!

Spinach and other dark leafy green vegetables are packed with nutrition - excellent sources of vitamins A & K, potassium, iron, magnesium & manganese as well as smaller amounts of other vital vitamins & minerals.

I prefer Swiss Chard as it's not as bitter as Spinach sometimes tend to be, both these veggies are from the same family and a definite yes for anyone on the Keto diet!

INGREDIENTS

  • 2 tbsp Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic crushed
  • 2 green Chillies seeded & chopped
  • 1 tsp Cumin seeds
  • 1 tsp ground Coriander
  • 1/2 tsp Turmeric
  • 1/2 tsp ground Ginger
  • 750 ml Vegetable Stock
  • 400 ml Coconut Milk
  • 500 gram Swiss Chard
  • Juice of 1/2 Lemon
  • Coconut shavings to garnish

Sautee Onion, Garlic & Chillies in Oil, add spices.

Add Stock and Coconut Milk, cover and simmer slowly for 10 minutes.

Stir in the Spinach and cook for 3-5 minutes, until leaves wilt.

Blend 3/4 of the soup till smooth.

Return to pot, add Lemon juice, check seasoning, heat gently and serve as a starter with Coconut shavings.

I have now heard for the first time that spinach can be bitter. The ones that I've ever eaten were not bitter at all. But it could be that you have different sort of spinach or maybe it gets bitter when it gets older.. no idea.. BUT I love spinach. It's actually my favorite leafy veggie..

I'm also making soups from whatever I have in the fridge. It's amazing how soups taste good regardless of what is inside :) I have never made swiss chard soup and it sounds so good that I will definitely do it. Up until now I was just sizzling it and eating it with whatever I had as main dish..

That looks SO delicious! I love chard, and I would love some of that soup right now! I've always been a fan of spinach - maybe it's because I used to watch Popeye as a child :D
I buy chard when it's in the shops, and once when I was standing in a supermarket queue, the lady behind me asked me what it was! I think it was the brightly coloured stalks that caught her eye, and I was happy to introduce her to a healthy new veg :)

It really was packed with flavour and so quick and easy! I'll eat spinach or chard every day, just love it, thank you so much for your comments @natubat!

My, my I can smell those luscious onions cooking, any creamy soup with onions makes my day. This is beautiful @lizelle, with that many soup recipes on hand you are definitely more than set for the winter, lol I bet your hubby is so happy when you start making soups, add a little keto bread with it and you need nothing else. Wonderful! You're a kitchen genius :)

I agree that soups are of the most comforting meals, and this recipe looks delicious!

I especially love that you use coconut milk, as that is a staple in my diet.. I even use it as creamer in my coffee or tea!
