Vegan Whole Rice & Red Beans Homemade Burrito

I hope you all have a great weekend, dear steemit community!

This recipe I share with you today is that kind of recipe I make very very very often.
It's true that there are more than a few ingredients you need to make it, but is all worthed.
This recipe is vegan but if you want, you can add chicken fillet bites, for more protein or maybe just because you like meat? Anyway, trust me, you wont need it.

Because the recipe contains whole rice and red beans, you already get your protein dose. This tasty duo of rice and beans not only are protein packed, but they are fiber rich foods and great sources of carbos.

Unfortunately, I didnt take photos of cooking process, but don't worry, its so easy to make!! You'll see if you take a down below to the instruction section.

INGREDIENTS

For the Rice and Beans Sauce

  • 1 large onion
  • 5 garlic cloves
  • 2 Tbsp olive oil
  • 1 red pepper
  • 1 can of red beans 400g
  • whole rice (around 150g)
  • 1 can of corn or frozen corn (200g)
  • tomato paste (around 200-250ml)
  • 1/2 can coconut milk (use the coconut fat too)
  • salt, pepper
  • mexican spice mix (cumin, chilli, paprika, coriander are the main spices, dont miss them)

Fresh vegetables

  • 1 avocado
  • 1 tomato
  • 1 cucumber
  • 1 yellow pepper (but any color will do)
  • 1 red onion or green onion
  • green salad

Other ingredients

  • tortillas
  • vegan cooking cream

INSTRUCTIONS

  1. First thing: boil the rice.

  2. Meanwhile, you need to make the sauce. Start with heating the olive oil and then add onion, red pepper and garlic. Stir continuosly for 3 minutes or so.

  3. Add the beans, corn, coconut milk, tomato paste, condiments and let simmer. Don't forget to turn the heat to low. This will take around 10-15 minutes. Stir ocassionally with a wooden spoon until you get the sauce to a boil. All the flavors must communicate with each other in order to create a very delicious mexican-like taste. Yummy

  4. When the rice is fully cooked, add it to the mixing sauce and you're Done!!

  5. Wash and cut into small peaces the fresh vegetables.

  6. Assemble these burritos like this: tortilla, sauce, veggies and vegan cooking cream)

Well, this was my lunch today! I think its pretty easy to make, don't you think?
