Homemade Chocolate Ice Cream (No Eggs, No Ice Cream Machine)

In this episode of In the Kitchen with Matt I will show you how to make chocolate ice cream. This homemade chocolate ice cream recipe is really easy to make, few ingredients, and doesn't require any eggs, or an ice cream maker. You can use an ice cream machine if you like however. Instead of an ice cream machine we will use a couple of plastic bags and ice! It is fun to make and a great activity to do with the family. Let's get started!

Ingredients:
1 cup of heavy whipping cream (240mL)
1 cup of whole milk (250mL)
1/2 cup of white granulated sugar (115g)
1/4 cup of semi sweet chocolate chips (40g)
2 Tbsp. of unsweetened cocoa powder (30g)
1 tsp. of vanilla extract (5mL)

Tools/Items needed:
Rock salt (about 1 cup)
Zip Lock bags, I am using 1 Gallon size
Sieve
Towels
Large Bowl
Whisk

Step 1: Combine Milk and Cream and whisk together

Step 2: Heat in microwave for 1 minute to 1:30 until it gets really hot, or use the stove top and a pot

Step 3: Add Chocolate chips, sugar, and cocoa powder, then whisk gently. Let sit for 5 to 10 minutes so chocolate can melt.

Step 4: Add Vanilla extract and then stir, making sure the cocoa powder and melted chocolate chips are well incorporated. Let cool to room temp, or place in fridge for about 30 minutes.

Step 5: Add chocolate ice cream base to a zip lock bag.

Step 6: Add ice and rock salt to another bag, then add bag with chocolate ice cream base. Then add more ice, seal it up.

Step 7: Wrap in some towels, it gets really cold, then shake shake shake for several minutes until it hardens up. If you half the recipe it takes less time. (5 to 15 minutes) Good way to burn calories before you eat it! lol

Step 8: Add to a bowl and if it is still too soft, place in the freezer for 4 to 6 hours or over night, for desired firmness. Add plastic wrap to the top, to help prevent ice crystals from forming.

Step 9: Serve it up!
