Super Simple Banana Nut Bread (Don't Throw Away Those Nasty Bananas!)

This is a bit outside of what I'd normally write about, but I had 5 really black bananas that were imminently headed for the trash when I thought of something my mom would have done.

Make banana nut bread!

This delicious treat is super easy to make, so I thought I'd quickly post the process. You probably have everything you need already. I will get quickly to it.

What you'll need (For 1 loaf):

  1. A loaf tin, a large mixing bowl and something to whisk with
  2. 2 super ripe bananas (black is perfect!)
  3. 1/3 cup soft butter (usually marked on a butter stick)
  4. 3/4 cup of sugar (substitute half for brown sugar for even more yum)
  5. 1 egg
  6. 1 tsp vanilla (optional)
  7. 1 1/2 cups of whatever type of flour you have around
  8. 1 tsp baking soda
  9. a pinch of cinnamon
  10. 1/4 tsp salt (unless your butter is already salted, in that case skip it)
  11. A good handful of nuts. I prefer walnuts

Make the mixture:

  1. Rub some oil or butter inside of your bread tin and sit to the site.
  2. Set oven to 355F. By the time it's preheated, you'll be ready to put the tin in there!
  3. Put the bananas and butter into the bowl and whisk them up.
  4. Whisk in the sugar, vanilla, baking soda, salt, cinnamon and egg.
  5. Stir in the flour until smooth.
  6. Mix most of the nuts in leaving a few for the top, then pour mixture into the greased tin.
  7. Crush up the remaining nuts in your hands and spread them over the top of the mixture.
  8. Bake for around 45 minute, then remove and let sit for a few minutes to cool down.
  9. Dump the bread out on a rack and cool for a bit before slicing, otherwise it may fall apart!

And Voila! Super quick and delicious. Now don't you feel better about not wasting those disgusting looking old bananas?

My preferred way to eat them is to slice them, pop them in the toaster just to warm them up and then spread some butter on. So good! But eat them however you want. I hope you enjoy!

Now that is absolutely delicious, so yummy. I generally add almond powder for more richer texture, raisins n sultanas for that chewy gooey element and then the slice is definitely decorated with some strawberries and cream n some chocolate sauce drizzled over, little here little there. :)

Sounds awesome! I will have to try that next time with the raisins etc. I love chewy stuff. hehe
