And we're lovin' it!
I've got an upcoming video planned about how the best way (for us anyway) to eat healthier is to garden. Honestly, it makes it so easy, rewarding, and affordable!
I'M KALING IT!
I would never think about purchasing as much kale as we are eating right now, but when it's constantly growing like mad and needs to be harvested, the we are "forced" into eating fresh, healthy greens regularly! Today I chopped up a big bowl of kale and walking onions, and then decided to cook them in some butter. Last time it was a big salad that we enjoyed, and then Mama-Pepper cooked the leftovers as a side dish the next day.
I love the fact that so many of the garden plants we grow can either be used fresh and raw or cooked, since it gives us more options. I also like to just take a walk in the garden with some industrial strength scissors and a bowl. I'll cut the crops to size right there, and then just rinse and strain them at home. No need for dirty knives or cutting boards that way, so less dishes is an added bonus.
Of course the coolest thing about it is that our Little-Peppers goggle these greens up. It's so cool to watch even the smallest of them ask for more salad! Yeah, they're eating great and appreciate the food that we grow and forage. We're getting tons of Lambs Quarters, Chickeweed, Green Brier, and Creeping Charlie too, so we keep it varied. I hope that those of you who garden also being blessed with a harvest!

This is really amazing! Fresh garden greens are the best! I really love to hear how the little ones love to gobble up the greens :) It makes me happy to know they know the joy of fresh, nutritious garden food and that they are learning how to grow and harvest the food first hand.
