You may have heard the term "Super food" being tossed around in some health blogs. But what exactly is a Super food? Super foods are whole foods that are not processed, so they retain more of their balanced combination of nutrients that nature gave them. These nutrients include a mix of the essentials- fiber, protein, vitamins, minerals, and other familiar nutrients that our bodies require to function properly and maintain good health. Super foods also include various natural plant substances called phytonutrients that play an important role in reducing health ailments such as heart disease, high blood pressure, diabetes and cancer. The best way to capture all of these benefits is to eat a variety of whole foods. This series will help you choose which super foods you should be including in your diet. Lets get to it...

Today's Super food is Avocado. Avocado is rich in folate, Vitamin A, and potassium. This fruit is very high in calories, 85% of which comes from fat, however, this fat has excellent health benefits. This heart-friendly fat is of the mono-saturated variety, so it does not raise blood cholesterol levels. Avocado also contains lutein, an antioxidant that helps maintain healthy eyes and skin.

The 2 most common varieties of avocados are the pebbly-skinned, dark green Haas and the smoother skinned, larger Florida avocado. Ripe avocados yield to gentle pressure and should be unblemished and heavy for their size. If you won't be using them right away, choose avocados that are firm. You can always speed up the ripening by placing them in a brown paper bag. Once ripened, avocados can be stored in the refrigerator for several days.

Avocados should be served raw because they have a bitter taste when cooked. If you want to use them in hot pasta or vegetable dishes, add them before serving. Once avocado flesh is cut and exposed to air, it browns rapidly. Adding the avocado to a dish at the last minute helps minimize this, as does tossing the cut avocado with lemon or lime juice. Contrary to popular belief, burying the avocado pit in mashed avocado will not help maintain its color.
