Pepalto : A Glutinous Rice Kapampangan Delicacy

A sweet and delectably creamy local favorite treat that brings a lot of childhood memories. That is how I would describe this Filipino delicacy we call pepalto in the kapampangan dialect. The word pepalto means made something appear literally. I think the delicacy got its name from the manner it gets cooked. You submerge it on boiling water and once it rises or shall I say appears to the surface of the boiling water that means its cooked. No need to remember the time on how long it Cooks you take the clue from its rising to the top very easy right?

This photo above is the traditional look. White color due to the color of the Glutinous Rice which is the main ingredient. Once cooked, roll it in sugar then sprinkle some grated coconut that's it. Nowadays people are adding their own preferred ingredients like adding any sweet fruity flavor, anise seeds and more it is really up to your own liking. Very versatile delicacy.

On this photo I made another batch and I added color to the dough. I grated a small piece of boiled purple yam and mixed it in. It was just an experiment and I will add more next time so the color would be more vibrant.
